If you love old fashioned peanut butter cookies, you’ll adore this so easy-to-make, 3 ingredient, low carb version. Better make a double batch, as these will definitely disappear quickly.  And by the way, these are terrific right out of the freezer.

Instructions

  • Get your 3 ingredients together and preheat your oven to 350F
  • Line a baking sheet with parchment paper
  • Hand mix the peanut butter, powdered (confectioners) Swerve and egg in a bowl until the ingredients are all encorporated into a dough
  • Roll the cookie dough into little one-inch balls and space them out on the lined baking sheet
  • Use a fork to press the balls into a flat cooke shape and make the criss-cross pattern
  • Bake in your pre-heated oven for about 12-15 minutes or until the edges turn a darker brown
  • Let them cool a bit in order to spatula them off to a wire rack to cool the rest of the way
